St. Patricks day muffins/Green muffins/ Popeye muffins

Staying with my frugal ways I made some muffins from scratch this morning.  I have made similar muffins before and my kids 4 and 7 loved them.  B my youngest ate 2 normal sized muffins for lunch plus a mini muffin.

St. Patrick's Day muffins

This makes about 2 dozen normal sized muffins or in my case this morning 12 normal size muffins and 24 mini muffins

2 cups all purpose flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp ground cinnamon
1/4 tsp salt 
1/4 cup canola oil
3/4 cup milk
1 large/jumbo egg
8 oz. - 10 oz. frozen spinach thawed
1 very ripe banana ( used one I had in the freezer)
2 tsp imitation vanilla flavoring or vanilla extract

Preheat oven to 350 degrees f and line muffin cups with paper(I also spray them with nonstick spray)
Combine dry ingredients in a large bowl set aside.  In a blender put the egg,spinach, canola oil and milk combined till thoroughly mixed about 30 seconds add banana and vanilla combine till banana is pureed add the wet ingredients to the dry.  Fill muffin cups about 2/3 full.  Bake 16 - 18 minutes for regular sized muffins till a toothpick inserted in center comes out clean.  FYI prior to baking my kids add 3 candy coated chocolates to the top or sprinkled with green sugar. 

Enjoy! This recipe will be frozen and last my kids about 2 weeks.  Left out they only make it about 3 days before they grow there own green in the form of mold.  I freeze in zip top freezer bags for up to 6 months.

Been forever and pizza dough

So I am still living a frugal lifestyle for the most part I continue to be a SAHM.  I love it for the most part we all have our days.  I started making pizza dough a few months ago cause I was told how much cheaper it was.  My MIL gave me a bread machine so I use that on the dough setting after months of tweeking I think I have found a favorite.  I don't like a yeasty taste in my dough so if that's something you like you won't like this dough.  It makes 1.5 lbs dough or one 15 inch thick crust or 2 smaller pizzas.

Mommy S Pizza dough

1 1/8 - 1 1/4 cup warm water(100-115 degrees)
2 tbsp olive oil
1 tbsp honey
1/3 cup dried potato flakes 
3 cups flour (I prefer white all purpose)
1 tsp salt
1 tsp bread machine yeast

Combine ingredients according to manufacturers instructions.  Mine says add liquids first then dry adding yeast last.
